Food For Life: Moussaka

This recipe is: egg-free, gluten-free


This recipe makes 12 portions of about 160g moussaka, 40g salad, 30g pitta bread.


Ingredients:

1 small aubergine, sliced

350g potatoes, washed

1 small onion, peeled and diced

400g minced lean lamb

1 can (400g) chopped tomatoes

2 tablespoons tomatoes puree

1 teaspoon dried mixed herbs

350m semi-skimmed milk

1 heaped tablespoon cornflour

40g cheddar cheese, grated

 

Serve with:

Pitta bread (gluten free, if required)


Method:

Heat the oven to 170C 325F, gas mark 3

Place the aubergine slices on baking tray in the oven and cook for 15 minutes until soft

Cook the potatoes whole until tender, and slice

Dry fry the onion and lamb until browned

Add the tomatoes, tomato puree and mixed herbs to the lamb mixture and simmer until the meat is cooked

Make a white sauce by heating the milk, blending the cornflour with a little hot milk and then adding to the milk, stirring until it thickens

Layer the meat mixture, potatoes and aubergines in an ovenproof dish, pour over the white sauce and sprinkle with cheese


Bake in the oven until piping hot throughout
