Food For Life: Pea Tortilla

This recipe is: vegetarian, gluten-free, diary-free

This recipe makes 12 portions of about 100g tortilla, 40g salad.

12 free range eggs
1 tablespoon chopped parsley
2 tablespoons vegetable oil
1 medium onion, diced
125g fresh or frozen peas
125g fresh or frozen broad beans
6 small potatoes, boiled whole and sliced


Beat the eggs with parsley Heat the oil in a frying pan with a heatproof handle and fry the onion until it softens
Add the peas, broad beans and potatoes and pour over the egg mixture
Cook for 5 minutes in the frying pan
Place the pan under a hot grill to cook the top of the tortilla
Cut into rounds
